Throughout the year men descend upon Kessler Canyon to show their masculinity while hunting wild game and birds. Grunting and groaning and drinking whisky, sharing stories of giant elk and even bigger fish.

CULINARY DEMONSTRATIONS AND ONE-DAY CLASSES

  • Preparing wild game and wine pairing – Perfect for shooting enthusiasts who want to cook their kill, this course makes game more accessible for the home cook and also gives instruction on sauces, searing and roasting, pates, braised stews and selecting complementary wines.
  • Breasting, plucking and preparing fowl – After this lesson in our million dollar kitchen, you will know exactly what to do with a pheasant in feather.
  • Chocolate and Wine – A truly decadent class, learn the art of truffle making as you and your chef pair wines with different types of chocolate.

At this three-day class with Chef McNab, guests receive hands-on training and guidance through the preparations and presentations of a seven course dinner, including wine pairings.
  • Day One – Hors d'ouvres, soups and salads
  • Day Two – Intermezzo and wild game entrées
  • Day Three – Desserts and fromage

For those wishing to learn a fun and interesting part of cowboy history, we offer classes in Dutch oven cooking with real life Chuckwagoncook. Experience the adventure of an 1890’s cattle drive including the sites, sounds and tastes of the old west. This is chuckwagon cooking at its best. We prepare meals in the traditional manner of Dutch oven cooking with a flair for more modern tastes. We keep our menu simple so as to replicate the true Cowboy era. Though simple, they are big on flavor, aroma and portion.
